Bean There, Done That Tacos
Ingredients
Zucchini, red onion, bell pepper
1- 15oz can corn, drained
1- 15oz can black beans, drained
1 clove garlic
1/2 tsp ground cumin
Salt and pepper to taste
8 small tortillas (corn or flour)
Shredded lettuce
Cheese (optional)
Directions
Preheat your oven to 425°
Toss sliced zucchini, red onion, bell pepper, and corn in a bowl with olive oil, salt, and pepper
Spread on a baking sheet and roast for 20-25 minutes
Cook black beans in olive oil with garlic, cumin, salt, and pepper for 5-7 minutes
Warm tortillas
Assemble tacos with black beans, roasted veggies, and optional lettuce and cheese
Top with salsa, guacamole, or sour cream
Serve roasted veggie and black bean tacos while warm
