Chickpea Thai Fusion Stir-Fry
Ingredients
1-15 oz can of chickpeas
2 cups of canned vegetables (e.g., corn, carrots, peas)
1/2 onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
2 tbsp soy sauce
1 tsp ground ginger (or fresh if available)
1 tsp honey or sugar (optional)
Salt and pepper to taste
Cooked rice or noodles (optional, for serving)
Directions
Rinse canned chickpeas and set aside
Sauté onion and garlic in olive oil until fragrant
Cook canned vegetables until caramelized (about 5-7 minutes)
Add chickpeas, warm for 2-3 minutes
Mix soy sauce, ginger, and sweetener, pour over ingredients
Stir and cook to blend flavors
Adjust seasoning
Serve hot over rice or noodles or enjoy as is
